Brown Stock Recipe

Ingredients :
Makes about 2.8 liters |

Onion, cut into quarters
Celery sticks, chopped
Garlic
Peppercorns
Unpeeled root ginger
Cold water

Method :

Place all the ingredients in a large pot
with a well-fitting lid and bring to the boil.

Adjust the heat to maintain a faint simmer
(It is important to make sure that the stock is not boiled a boiling
result in a cloudy broth.

Simmer for 4-5 hours, stirring
occasionally.

Leave to cool, then strain.

Use as required.
