Cucumber, peeled, deseeded and grated
Limes (squeezed and juiced)
Cold water
Vietnamese fish sauce
Small red chili, finely chopped
Garlic, finely chopped
Golden caster sugar
Salt
Pepper
Put all the ingredients into a bowl. Mix well together.
Season to taste with salt and pepper.
This dipping sauce will keep for several days in a refrigerator, in an airtight container.
