Garlic, crushed and finely chopped
Shallot, finely chopped
Small red chilies, finely chopped
Crunchy peanut butter
Palm sugar
Vietnamese fish sauce
Coconut milk, plus extra if necessary

Method :

Heat the oil in a heavy based saucepan.

Add the garlic, shallot, chilies and fry
gently for 2 minutes or until the shallots are softening.

Add the peanut butter, sugar, fish sauce
and coconut milk.

Mix together thoroughly, then cook over
low heat for 10 - 15 minutes.

Add more coconut milk if the sauce is
becoming too thick.
