Fermented anchovy paste
Pineapple, finely crushed
Garlic, peeled and finely chopped
Red chili, seeded and finely chopped
Lemon grass, bulbous portion only, finely chopped
Sugar
Water
Combine ingredients and mix well. Bring to the boil stirring then allow to cool.
Serve as a dipping sauce.
