This hot peanut dipping sauce is popular throughout Vietnam. Add more chili, sugar or liquid, according to taste.
Ingredients : Makes 300 ml / 10fl oz / 2 1/4 cups

Garlic, finely chopped
Red Thai chilies, seeded and chopped
Unsalted roasted peanuts, finely chopped
Chicken stock
Coconut milk
Hoisin sauce
Nuoc Mam
Sugar
Heat the oil in a small wok and stir in the garlic and chilies.
When they begin to color, add all but 15 ml of the peanuts.
Stir for a few minutes until the oil form the peanuts begins to weep.
Add the remaining ingredients, bring to the boil.
Simmer until the sauce thickens and oil appears on the surface.
Transfer the sauce to a serving dish and garnish with the reserved peanuts.
