Nuoc Leo Sauce Recipe

This hot peanut dipping sauce is popular throughout Vietnam. Add more chili, sugar or liquid, according to taste.

Ingredients : Makes 300 ml / 10fl oz / 2 1/4 cups

Vegetable oil

Garlic, finely chopped

Red Thai chilies, seeded and chopped

Unsalted roasted peanuts, finely chopped

Chicken stock

Coconut milk

Hoisin sauce

Nuoc Mam


Method :
  • Heat the oil in a small wok and stir in the garlic and chilies.

  • When they begin to color, add all but 15 ml of the peanuts.

  • Stir for a few minutes until the oil form the peanuts begins to weep.

  • Add the remaining ingredients, bring to the boil.

  • Simmer until the sauce thickens and oil appears on the surface.

  • Transfer the sauce to a serving dish and garnish with the reserved peanuts.
