Sesame Seed Sauce Recipe

Japanese white sesame seeds
Oil (if necessary)
Japanese soy sauce
Mirin
Caster sugar
Instant dashi granules
Warm water

Method :

Toast the Japanese white sesame seeds in a
dry pan over medium heat for 4 minutes, shaking the pan gently, until
seeds are golden brown.

Remove from the pan at once to prevent
burning.

Grind the seeds in a mortar and pestle
until a paste is formed.

Add oil, if necessary, to assist in
forming a paste.

Mix the paste with Japanese soy sauce,
mirin, caster sugar, instant dashi granules and warm water.

Store, covered, in the refrigerator and
use within 2 days of preparation.
