Vietnamese Dipping Sauce Recipe

Castor sugar
Lime or lemon juice
Japanese rice vinegar
Fish sauce
Water
Garlic, sliced
Large red chili, sliced

Method :

Mix the sugar with the lemon juice,
vinegar, fish sauce and water.

Stir constantly until the sugar dissolves.

Pour the mixture into a blender or food
processor.

Add garlic and chili then blend until
fine.

Pour into a bowl and allow the pink froth
to settle and disappear before serving.

Serve as a dipping sauce with Vietnamese
beef and herb rice paper rolls, if desired.
