Crabmeat Fritters Recipe

Bean sprouts

Green onions (scallions), chopped

Crabmeat

Salt

Cracked black peppercorns

Oil (for deep frying)

 

 

Cornstarch

Sugar

Soy sauce

Chicken broth

Nuoc Cham sauce

Dry Sherry

Method :
  • Beat the eggs in a bowl.

  • Stir in bean sprouts, green onions (scallions), and crabmeat, and add salt and pepper to taste.

  • Add oil in a frying pan to cover the base, heat it and drop in all of the crab mixture, 1 heaping tablespoon at a time.

  • Fry until golden brown on one side, then turn and brown the other side.

  • Remove from pan, and keep warm

  • To make the sauce, blend together the cornstarch and sugar in a pan.

  • Add soy sauce, chicken broth and nuoc cham sauce.

  • Slowly bring to the boil over a low heat, stirring all the time.

  • Cook for 3 minutes (or until sauce is thickened)

  • Stir the sherry into the mixture before serving.
