Crabmeat Fritters Recipe

Bean sprouts
Green onions (scallions), chopped
Crabmeat
Salt
Cracked black peppercorns
Oil (for deep frying)
Cornstarch
Sugar
Soy sauce
Chicken broth
Nuoc Cham sauce
Dry Sherry

Method :

Beat the eggs in a bowl.

Stir in bean sprouts, green onions
(scallions), and crabmeat, and add salt and pepper to taste.

Add oil in a frying pan to cover the base,
heat it and drop in all of the crab mixture, 1 heaping tablespoon at a
time.

Fry until golden brown on one side, then
turn and brown the other side.

Remove from pan, and keep warm

To make the sauce, blend together the
cornstarch and sugar in a pan.

Add soy sauce, chicken broth and nuoc cham
sauce.

Slowly bring to the boil over a low heat,
stirring all the time.

Cook for 3 minutes (or until sauce is
thickened)

Stir the sherry into the mixture before
serving.
