Sauteed Lobster Tail in Tomato Sauce Recipe

Large lobster (about 2 lbs)
Diced onion
Green peas (cooked)
Egg white
Salt
Cornstarch
Wine
Ketchup
Water
Sugar
Vinegar
Cornstarch
Salt

Method :

Cut up the lobster tail and remove the
meat from shell, slice the meat horizontally (crosswise). Soak the
lobster meat in marinating ingredients for about 30 minutes at least.

Steam the head and tail of lobster about
20 minutes, remove from steamer and brush with some oil. Set on an
oblong platter heat at one end and tail at the other.

Measure into a small bowl ketchup, water,
sugar, vinegar, cornstarch and salt. Add the seasoning sauce. Mix well.

Heat 3 tablespoons oil in frying pan to
300o. When oil is hot, add the lobster meat and stir fry
about 10 seconds over high heat. Drain oil and place lobster in a bowl.
Set aside.

Put in frying pan 3 tablespoons oil, fry
diced onions for a few seconds. Add the seasoning sauce and lastly the
peas and lobster meat. Cook until sauce thickened.

Pour on platter and serve.
