Pick over crab meat and discard any bits
of bony tissue.
Heat 1 tablespoon oil in a frying pan and
saut� the spring onions (scallions) and chili for 1 minute.
Add crab meat and fry for another 1 to 2
minutes. Sprinkle nuoc cham sauce over.
Remove mixture to a small place and allow
to cool
Heat one tablespoon full of oil in the
frying pan, pout in beaten eggs and cook, drawing egg mixture in from
sides of pan, until set on the bottom, creamy on top.
Spoon crab meat down centre of omelet and
fold in half.
