Pork belly, thickly sliced
Ground white pepper
Salt
Cooking oil
Garlic, peeled and finely chopped
Sugar
Shrimps
Young coconut, fresh coconut
Marinate pork with some pepper and salt.
Heat oil and stir fry garlic until fragrant.
Add sugar and cook until it caramelizes.
Add pork and stir fry until half cooked.
Add shrimps and stir fry until they turn red.
Season with more salt and pepper to taste.
Add coconut juice and bring to the boil then simmer until sauce is thick.
Serve with steamed rice.
If coconut juice is not available, use stock or water.
