Large shrimps, peeled and deveined
Garlic, peeled and chopped
Fish sauce
Salt
Oil
Red or green chilies, chopped
Oyster sauce
Fresh coriander (cilantro), coarsely chopped

Method :

Place the shrimps in a large mixing bowl
and stir in 1 teaspoon chopped garlic, 1 tablespoon fish sauce and the
salt. Set aside for 30 minutes.

Heat the oil in a wok or frying pan over
high heat, add the shrimps and stir-fry until they turn pink, about 5
minutes.

Remove to a serving platter.

Stir the chilies, the remaining fish sauce
and garlic, and the oyster sauce into the wok and cook over high heat
for about 1 minute.

Pour over the shrimp, garnish with the fresh
coriander, and serve.
