Raw peeled shrimps, cut in half lengthways if large
Shallots, sliced
Small fresh chilies, seeded and chopped
Tomatoes, cut into wedges
Fish sauce
Oyster sauce
Chicken stock or water
Coriander leaves, for garnishing
Garlic, chopped
Chopped coriander
Chopped lemon grass
Black or white peppercorns

Method :

Using a pestle and mortar, pound garlic,
coriander, lemon grass and peppercorns to a paste.

Heat oil in a wok, or frying pan and stir
fry spicy paste for 15-20 minutes until fragrant.

Add shrimps, shallots or onion, chilies
and tomatoes.

Stir fry for 2-3 minutes

Add fish sauce, oyster sauce and stock or
water.
Bring to the boil and simmer for 2-3 minutes.

Serve garnished with coriander sprigs.
