Simmered Fish Recipe

(Ca Kho To)

Ingredients : Serves 4

Mud fish or any fish fillet, cleaned

Fish sauce


Caramel syrup

Chicken seasoning powder

Ground white pepper

Spring onion (scallion), white portion only, chopped

Red chili, chopped

Cooking oil

Method :
  • Cut fish into 100 g steaks. Marinate with fish sauce, sugar, caramel syrup, chicken seasoning powder and pepper for 15 minutes.

  • Mash spring onion and chili together using a mortar and pestle.

  • Heat oil and stir fry mashed spring onion and chili mixture until fragrant.

  • Add fish and cook each side for 5 minutes.

  • Add water and simmer until sauce is thick and coats fish.

  • Garnish with spring onion and sprinkle with pepper as desired.

  • Serve with steamed rice.


Use stock in place of water to simmer fish for an even richer flavor.
