Simmered River Shrimps Recipe

Ingredients : Serves 4

Freshwater shrimps

Salt

Black peppercorns

Cooking oil

Sugar

Garlic, finely chopped

Fish sauce

Onion, peeled and cut into wedges

Water

Method :
  • Marinade shrimps with salt and 1/4 teaspoon pepper for 15 minutes.

  • Heat oil and add sugar and garlic.

  • Cook until garlic turns golden brown and sugar caramelizes.

  • Add shrimps and mix well. Reduce heat and simmer, flipping shrimps over frequently.

  • Add fish sauce, onion, remaining pepper and water.

  • Cook uncovered for 10 minutes until shrimps are completely cooked.

  • Remove shrimps but leave sauce to cook further.

  • Allow it to reduce until slightly sticky.

  • Pour over shrimps.

If freshwater shrimps are not available, use tiger shrimps or any other type of shrimps.
