Simmered River Shrimps Recipe

Ingredients :

Freshwater shrimps
Salt
Black peppercorns
Cooking oil
Sugar
Garlic, finely chopped
Fish sauce
Onion, peeled and cut into wedges
Water

Method :

Marinade shrimps with salt and 1/4
teaspoon pepper for 15 minutes.

Heat oil and add sugar and garlic.

Cook until garlic turns golden brown and
sugar caramelizes.

Add shrimps and mix well. Reduce heat and
simmer, flipping shrimps over frequently.

Add fish sauce, onion, remaining pepper
and water.

Cook uncovered for 10 minutes until
shrimps are completely cooked.

Remove shrimps but leave sauce to cook
further.

Allow it to reduce until slightly sticky.
-
Pour over shrimps.
If freshwater shrimps are not available,
use tiger shrimps or any other type of shrimps.
