Stir-Fried Squid with Green Pepper Recipe

Seasoning

1 1/2 tablespoons

Dried squids

Medium-sized green capsicum

Dried chilies

Chopped garlic

Sherry

Baking soda

Cornstarch, blended with 3 tablespoons water

Oil

Oil for deep frying

 

 

Soy sauce

Worchestershire sauce

MSG (optional)

Sugar

Sesame oil

Method :
  • Soften dried squids by soaking in some water the baking soda dissolved in it.

  • Remove softened squids and rinse under cold running water. Discard tail and head portions.

  • Cut body into 4 sections and make lengthwise and crosswise scores on each piece. Cut into bite-size pieces.

  • Cut capsicum into bite-size pieces and the dried chilies into 1 inch pieces.

  • Put squids into boiling water for 20 seconds so that they curl slightly. Remove and drain.

  • Deep fry squids for 30 seconds. Remove again and drain.

  • Heat oil and stir fry dried chilies and garlic till fragrant.

  • Add sherry, squids and seasonings, toss well. Add in capsicum and stir fry for 1 minute.

  • Stir in blended cornstarch to make a smooth gravy. Stir, dish up and serve on a warmed plate.
