Method :

Cut chicken wings or half chicken into
joints.

Peel melon, discard skin and spongy centre
with seeds.

Cut melon into bite sized cubes.

Slice spring onions (scallions)

Put chicken into saucepan with spring
onions, water and salt.

Bring to boil, then cover and simmer for 1
hour or until liquid is reduced and well flavored.

Add sauce and pepper to taste.

Serve immediately while it is still hot,
with rice if desired.
Tip : Peeled, sliced and seeded cucumber
can be used as a replacement for winter melon.
