Tomatoes Stir-Fried with Onions and Pine Nuts Recipe

Garnishing

2 sprigs

Cooking oil

Ripe red tomatoes, each cut into 6 wedges

White or yellow onion, cut into 1 cm dice

Spring onions (scallions), cut into 1 cm lengths

Pine nuts, toasted

Salt

Sugar

Soy sauce

 

 

Fresh coriander (cilantro) leaves, for garnishing

Method :
  • Heat oil in a wok until smoking hot.

  • Fry the onion and spring onions, quickly to release aromas, about 30 seconds.

  • Add the tomatoes, pine nuts, salt, sugar and soy sauce.

  • Stir fry continuously for 1 to 2 minutes.

  • Transfer to plate and serve immediately.
